I found a pretty cool site that lets you test the quality of your VoIP connection:

I highly recomend viewed the detailed results....the normal ones don't tell you much.  As is explained in their FAQ they use the ITU-T G.107 standard for testing.  More information on voice quality in converged networks can be found in this article from Cisco's Packet magazine.
